If you're looking for a simple dish to cook for dinner that is light and delicious, this Filipino inspired coconut salmon recipe makes a great viand.

Have you ever had poached coconut salmon before? If not, then you must try this recipe! I’m not going to elaborate this any further but this recipe is not only tasty but also very healthy.

This is one of my favorite Filipino recipes that is quick and easy to make. Also, you can make this in bulk as it lasts long in an airtight container in the fridge for several days and the best part, it tastes better after few days (that is, if you can resist not finishing everything in one sitting!)

What is paksiw na salmon sa gata?

Paksiw na salmon sa gata is a Filipino dish that consists of salmon poached in vinegar and coconut cream. This is a very simple dish that is enjoyed by a lot of Filipinos and is usually served with a heaping mountain of steamed white rice.

Traditionally, this dish is cooked without the coconut cream making this dish even simpler than it already is.

However, the most important part of this dish is absolutely the aromatics. Make sure that you do not forget the ginger, garlic, and shallots!

Here are the ingredients you’ll need to make this coconut salmon recipe:

  • Salmon. You’ll need about 200g of the salmon filet.
  • Ginger. Thumb-sized and minced.
  • Garlic. Peeled and minced.
  • Onion. Peeled and chopped.
  • Coconut cream. You can also use coconut cream.
  • Vinegar. You can use whatever vinegar you have in your cupboard. I used apple cider vinegar.
  • Soy sauce. Any light sauce will do like Kikkoman.
  • Fish sauce. Optional but makes a huge difference!
  • Black pepper.
  • Honey or sugar.
  • Veggies of your choice. I used eggplant and spinach.

How to make this Filipino style coconut salmon

Here’s how to make this Filipino coconut salmon recipe step-by-step!

  1. Saute your aromatics. Heat up your saucepan, add oil, and sautée your aromatics until they are soft, fragrant, and slightly caramelized.
  2. Add water, seasonings, and coconut cream. Add in the water and all the seasonings (soy sauce, fish sauce, honey or sugar, and coconut cream) and simmer for about 5 minutes.
  3. Add vinegar. Simmer for another 5 minutes.
  4. Vegetable. Add your choice of vegetables.
  5. Add in the salmon. Place your salmon in and poach until it is cooked, about 10 minutes depending on how thick you sliced your fish.
  6. Done and serve!

Here are the possible ways your can modify this dish according to your taste.

  • Salmon. You can use other types of fish for this dish. I’ve used tuna, cod, and whitefish before, for example.
  • Coconut cream. You can also use regular cream.
  • Vinegar. You can use whatever vinegar is available in your pantry. I’ve used apple cider vinegar, strong Finnish vinegar, coconut vinegar, and cane vinegar before.
  • Fish sauce. You can omit this if you’re not a fan but totally recommended as it makes a difference.
  • Soy sauce. You can use tamari for gluten-free option!
  • Vegetables. You can use any veggies that don’t take too long to cook like spinach, eggplant, pakchoi, morning glory, etc.

Ingredients

  • 200 g Salmon - Filet, no skin
  • 1 tbsp Vegetable Oil
  • 1 small Shallot - Minced
  • 3 cloves Garlic - Minced
  • 1 tsp Ginger - Crushed and minced
  • 4 dl Water
  • 3 tbsp Light Soy Sauce - i.e Kikkoman
  • 1/2 tsp Honey - You can also use sugar
  • 2 dl Coconut cream
  • 1 pinch Black Pepper
  • 5 tbsp Vinegar - i.e Apple cider vinegar, cane vinegar, etc.
  • 1 tbsp Fish Sauce - Optional
  • 1 small Eggplant - Optional
  • 1 handful Spinach - Optional

Instructions

  • Heat your deep saucepan on medium heat and add the oil
  • Sautée the minced shallot, garlic, and ginger until soft, fragrant, and slightly caramelized
  • Add water, soy sauce, fish sauce, and honey on the saucepan and let it simmer for about 5 minutes
  • Add the vinegar and let it simmer again for a few minutes
  • Lower the heat to medium-low and add and stir in the coconut milk and let it simmer until bubbles start to appear
  • Crank up the heat to medium again and add the eggplant and let it cook until the eggplant is soft
  • Carefully add the salmon in the sauce and simmer until the fish cooked
  • Add the spinach, stir, and season with black pepper and salt (if you want)
  • Serve and enjoy!

Notes

You can always omit the fish sauce if you're not a big fan of it. Normally, this dish is served with white rice but sometimes I personally eat this with cooked rice noodles.
