Ingredients

  • 75 g Dried Pasta
  • 1 L Water
  • 1/2 tsp Salt
  • 4 pcs Broccolini - Blanched or roasted
  • 2 tbsp Butter
  • 1 tbsp Olive Oil
  • 2 cloves Garlic - Minced
  • 1/2 tbsp Lemon Juice
  • 4 tbsp Grated Parmesan
  • 1 ml Chili Flakes - Optional

Instructions

Blanche or roast the Broccolini

  • Blanche: Boil 500ml of water and add a bit of salt and blanche the broccolini for about a minute, drain and cool down
  • Roast: Heat oven to 200°C/400°F and brush the broccolini with a bit of oil and lightly season with salt, roast for about 10 minutes or until there's a bit of color, take out from the oven and cool down

Cook pasta

  • Boil water in a pot and add salt
  • Add the dried pasta and cook according to what the package or until al dente
  • Once cooked and before straining the pasta, save about 5 tbsp pasta water and set aside
  • Drain pasta and DO NOT rinse/cool down with water

Combine everything

  • Heat a pan on medium heat and sautée the garlic until soft and fragrant
  • Add water, lemon juice, and let it simmer for a minute or so and add the cooked pasta and mix until combined
  • Turn off the heat and add the butter and mix until silky and creamy
  • Serve on a bowl and top it off with parmesan and broccolini
  • Enjoy!
