Ingredients

  • 1 tsp Vegetable Oil
  • 1 small Shallot
  • 2 cloves Garlic
  • 1/2 tsp Ginger
  • 2 tsp Thai Red Curry Paste
  • 2 medium Tomatoes
  • 1 tbsp Tomato Paste
  • 2 dl Red Lentils
  • 2 dl Coconut Milk
  • 3 dl Water
  • 1 tbsp Soy Sauce
  • 1 tbsp Lime Juice
  • 2 dl Spinach

Instructions

  • Heat a pan on medium heat, add the oil and sautée the garlic, shallot, ginger, and chili until soft, fragrant, and slightly caramelized
  • Add the Thai red curry paste and continue sautéeing for about a minute to release the its aromatic flavors
  • Add the tomato paste and stir for a little bit and add the chopped tomatoes, let it simmer until the tomatoes released its juices
  • Once the tomatoes are slightly cooked, add the water, coconut milk, and lentils
  • Lower down the heat and add the soy sauce and lime juice
  • Let this simmer stirring it often for the next 15-20 minutes until the lentils are cooked
  • Adjust the taste accordingly and either serve this with steamed white rice or on its own!
