Ingredients

  • 45 g Flat Rice Noodles - 45g is one ramen sized block (also, do not pre cook!)
  • 1/2 tbsp Vegetable Oil
  • 100 g Firm Tofu - Cut in cubes
  • 2 cloves Garlic - Minced

Vegan Pad Thai Sauce

  • 1 tbsp Light Soy Sauce - Tamari, if you want it gluten-free
  • 1 tbsp Apple Cider Vinegar - Any vinegar is fine
  • 1 tsp Sriracha
  • 2 tbsp Sugar Free Peanut Butter - Smooth or crunchy
  • 1 tsp Lime Juice - or lemon juice
  • 2.5 dl Water

*Vegetables I used in this recipe, you can use whatever is available in your fridge!

  • 1 small Carrot - Cut in strips
  • 3 pcs Button Mushrooms - Chopped
  • 1/2 small Yellow Onion - Chopped

Instructions

Mix your sauce

  • In a bowl, mix soy sauce, apple cider vinegar, sriracha, peanut butter, lime juice, and water. Mix until combined

Start cooking

  • Heat your pan on medium heat and add oil, add in your tofu and fry until most sides are golden brown
  • Add in the chopped garlic and stir fry until they are soft and fragrant making sure you're mixing all the time so nothing will get burned
  • Add in your vegetables and sautée everything until all ingredients are mixed
  • Lower the heat to medium-low and add in the Pad Thai sauce, stir until everything is covered with the sauce
  • Put the block of rice noodles in the middle of the pan and wait a bit till they are soft enough to start mixing
  • Once the noodles are soft, continue stir-frying until the noodles has absorbed most of the moisture in the pan
  • Your vegan Pad Thai is ready to serve once the noodles are soft and thoroughly cooked! Usually, it takes about 4-5 minutes from the moment you added it in the sauce
  • *Enjoy!

Notes

* You can add whatever vegetables you can in this dish. If you're planning to add carrots or anything that is hard and takes time to cook, make sure you chop them small and thin so it won't take long to cook.
* You can serve this with chopped spring onions, chopped coriander, a slice of lime, and chopped salted peanuts if you want.
I personally prefer it as it is without anything else whenever I make this dish to keep it simple and quick. It tastes delicious either way!
