Eggplant omelet? What is that!?

Dear friends, it is exactly what it is. It is an omelet with eggplant!

It may be one of the most bizarre combinations there is but it works well together and this Filipino eggplant omelet is one of my favorite dishes that my Mom often cook for the family.

If you want to spice up your morning eggs a little bit more than the usual cheese, tomato, spinach, or mushroom omelets then this is something you must certainly try.

So, let’s get on it!

What is a Filipino eggplant omelet?

How my mother used to make this is usually by grilling the whole eggplant until it is blackened, peel the skin, and coat the eggplant meat with seasoned beaten eggs and fry until golden.

This is perhaps the most classic way of making this infamous Filipino breakfast but some families often make this with minced meat and this is called “giniling na tortang talong”.

If you’re interested in making that, I made a stuffed eggplant dish inspired by the minced meat eggplant omelet.

Also, not to mention, eggplant is so good for you! It is packed with amazing vitamins and nutrients plus on top of it all, it is absolutely delicious.

Especially if you roast the eggplant first just like in this recipe! Roasting it first really brings out this natural smokey and sweet flavor that eggplant.

Ingredients used for this Filipino eggplant omelet

  • Eggplant. If you can find the long version, use that. However, the big fat ones that are from Spain or Italy are totally fine too, just cut it in half.
  • Eggs. Free-range, if possible, and seasoned with salt, black pepper, and garlic powder.
  • Vegetable oil. I used canola oil but use whatever is available in your pantry except for extra virgin olive oil! It is too bitter and you shouldn’t be frying anything with that.

How to make this Filipino eggplant omelet

  1. Roast your eggplant. Heat your oven to 200°C and roast the eggplant for 15 minutes or until the skin has blackened
  2. Peel your eggplant. Transfer the roasted eggplant in a bowl and cover it with a plate or cling film and let it cool down to the touch. Once cooled down, peel off the skin.
  3. Eggs. Crack your eggs in a bowl, beat it, and season it with salt, garlic powder, and black pepper.
  4. Combine. Using a fork, flatten your eggplant so that it cooks evenly and dip it in the egg.
  5. Fry. Heat up your oil in a frying pan on medium heat and fry your omelet and cook until golden brown.
  6. Done and serve. Eat it with steamed rice just like we Filipino’s enjoy it!

  • My favorite: Ketchup, apple cider vinegar, soy sauce, and minced garlic.
  • Keep it simple: Ketchup and soy sauce.
  • Boujee: Aioli Sriracha

Ingredients

  • 1 long Eggplant
  • 1 medium Egg - Beaten
  • 1/2 tsp Garlic Powder
  • 1 pinch Black Pepper
  • 1 ml Salt
  • 1/2 tsp Vegetable Oil

Instructions

  • Heat your oven to 200°C/400°F
  • Poke the eggplant with a fork and roast it in the oven for 15 minutes (if you have a gas stove, you can roast it on the burners until the skin is black)
  • Once the eggplant is roasted, transfer it in a bowl and cover it and cool down until you can handle it with your hands
  • Meanwhile, crack the egg in the bowl and add the garlic powder, salt, black pepper, and beat it up until combined
  • Once the eggplant is cooled down, peel the skin and place it in the bowl with the egg
  • With a fork, gently flatten the eggplant until it is flat enough and the thickness is even all over
  • Heat your frying pan on medium-low heat, add oil and carefully put the eggplant mixture in and cook it until it is golden brown, flip, and cook the other side
  • Enjoy and serve with hot steaming rice!
